- 1 lb ground beef
- 2 medium zucchinis, cubed
- 2 medium sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 medium onion, chopped
- Salt and black pepper, to taste
- 1 tsp paprika or smoked paprika
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and minced garlic; sauté until fragrant and translucent.
- Add ground beef and cook until browned, breaking it up with a spatula.
- Stir in sweet potato cubes. Cover and cook for about 10 minutes, stirring occasionally, until they begin to soften.
- Add cubed zucchini and season with salt, black pepper, and paprika.
- Cook uncovered for another 8–10 minutes, stirring occasionally, until vegetables are tender and everything is well combined.
- Garnish with fresh parsley before serving.
Notes
- Add chili flakes for a spicy version.
- Swap ground beef with ground turkey, sausage, or plant-based meat.
- Top with shredded cheese for extra richness.
- Serve on its own or over rice, quinoa, or mashed potatoes.
