- 1 tablespoon olive oil
- 12 oz halal sausage, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 medium potatoes, peeled and diced
- 1 can (15 oz) white beans, drained and rinsed
- 5 cups chicken or vegetable broth
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1 cup spinach or kale (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add sliced sausage and cook until lightly browned.
- Add chopped onion and sauté until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add diced potatoes, beans, broth, salt, pepper, paprika, and thyme.
- Bring to a boil, then reduce heat and simmer for 20–25 minutes until potatoes are tender.
- Add spinach or kale if using and cook for an additional 2–3 minutes.
- Taste and adjust seasoning as needed.
- Serve hot with crusty bread if desired.

- Use spicy or mild sausage depending on preference.
- Soup thickens naturally as potatoes break down.
