Description

A hearty and comforting soup made with savory sausage, tender potatoes, and protein-rich beans simmered in a flavorful broth.


Ingredients

  • 1 tablespoon olive oil
  • 12 oz halal sausage, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 1 can (15 oz) white beans, drained and rinsed
  • 5 cups chicken or vegetable broth
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1 cup spinach or kale (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add sliced sausage and cook until lightly browned.
  3. Add chopped onion and sauté until softened.
  4. Stir in garlic and cook for 30 seconds until fragrant.
  5. Add diced potatoes, beans, broth, salt, pepper, paprika, and thyme.
  6. Bring to a boil, then reduce heat and simmer for 20–25 minutes until potatoes are tender.
  7. Add spinach or kale if using and cook for an additional 2–3 minutes.
  8. Taste and adjust seasoning as needed.
  9. Serve hot with crusty bread if desired.

  • Soup thickens naturally as potatoes break down.
