Description

  • 2 cups cooked chicken breast or rotisserie chicken, shredded
  • 1/2 cup BBQ sauce (or to taste)
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/4 cup red onion, thinly sliced
  • 12 jalapeños, sliced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup diced tomatoes or salsa (optional)
  • Sour cream or ranch (for topping)
  • Lime wedges (for serving)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a large oven-safe skillet or cast-iron pan.
  2. In a bowl, mix shredded chicken with BBQ sauce until well coated.
  3. In the skillet, layer half of the tortilla chips, then top with half the BBQ chicken and cheese. Repeat with another layer of chips, chicken, and cheese.
  4. Add sliced red onions and jalapeños on top.
  5. Bake for 10–15 minutes, until the cheese is melted and bubbly.
