- 2 cups cooked chicken breast or rotisserie chicken, shredded
- 1/2 cup BBQ sauce (or to taste)
- 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
- 1/4 cup red onion, thinly sliced
- 1–2 jalapeños, sliced (optional)
- 1/4 cup fresh cilantro, chopped
- 1/2 cup diced tomatoes or salsa (optional)
- Sour cream or ranch (for topping)
- Lime wedges (for serving)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a large oven-safe skillet or cast-iron pan.
- In a bowl, mix shredded chicken with BBQ sauce until well coated.
- In the skillet, layer half of the tortilla chips, then top with half the BBQ chicken and cheese. Repeat with another layer of chips, chicken, and cheese.
- Add sliced red onions and jalapeños on top.
- Bake for 10–15 minutes, until the cheese is melted and bubbly.
- Remove from oven and garnish with fresh cilantro, diced tomatoes (if using), and your favorite toppings like sour cream or ranch.
- Serve immediately with lime wedges.
