- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1/2 cup melted butter or oil
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon (optional)
- 1 tsp vanilla extract
- 3/4 cup chopped walnuts
- 1/2 cup semi-sweet chocolate (for glaze, optional)
- 1/4 cup heavy cream (for glaze, optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large mixing bowl, mash bananas until smooth.
- Whisk in eggs, granulated sugar, brown sugar, melted butter or oil, and vanilla extract.
- In a separate bowl, combine flour, baking soda, salt, and cinnamon.
- Gradually stir the dry ingredients into the banana mixture until just combined.
- Fold in the chopped walnuts.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For optional glaze, melt chocolate and cream together until smooth, then drizzle over cooled loaf.
Notes
- Use very ripe bananas for the best flavor and moisture.
- Do not overmix the batter to keep the bread tender.
- The glaze is optional but adds a decadent touch.
- Store at room temperature, refrigerate, or freeze for longer storage.
- Turn into muffins by baking in a muffin tin for 20–25 minutes.
