Description

Banana Ice Cream with Mixed Fruits is a naturally sweet, dairy-free dessert made by blending frozen bananas into a creamy base and swirling in a colorful mix of your favorite fruits. A healthy and refreshing treat.

Ingredients

Units Scale
  • 4 ripe bananas, sliced and frozen
  • 1/2 cup frozen mango chunks
  • 1/2 cup frozen strawberries
  • 1/2 cup frozen blueberries
  • 1/4 cup coconut milk or any plant-based milk
  • 1 tsp vanilla extract (optional)

Instructions

  1. Place frozen banana slices in a high-powered blender or food processor. Blend until smooth and creamy, scraping down the sides as needed.
  2. Add coconut milk and vanilla extract (if using), and blend again until fully incorporated.
  3. Add frozen mango, strawberries, and blueberries. Pulse a few times to swirl them in while keeping some chunks for texture.
  4. Serve immediately for a soft-serve texture, or transfer to a container and freeze for 1–2 hours for a firmer consistency.
  5. Scoop into bowls and enjoy topped with extra fruit if desired.

Notes

  • Use very ripe bananas for maximum natural sweetness.
  • Customize with any mix of fruits like pineapple, kiwi, or raspberries.
  • For extra creaminess, add a spoonful of nut butter or Greek yogurt (if not vegan).
  • Store leftovers in an airtight container in the freezer for up to 1 week.
