Instructions
- Place frozen banana slices in a high-powered blender or food processor. Blend until smooth and creamy, scraping down the sides as needed.
- Add coconut milk and vanilla extract (if using), and blend again until fully incorporated.
- Add frozen mango, strawberries, and blueberries. Pulse a few times to swirl them in while keeping some chunks for texture.
- Serve immediately for a soft-serve texture, or transfer to a container and freeze for 1–2 hours for a firmer consistency.
- Scoop into bowls and enjoy topped with extra fruit if desired.
