Description

A delicious and easy oven-baked salmon infused with fresh lemon, herbs, and roasted cherry tomatoes. A light and flavorful dish perfect for a weeknight dinner!


Ingredients

  • 2 salmon fillets
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp garlic, minced
  • 1/2 tsp dried oregano
  • 1/2 tsp dried dill
  • Salt and black pepper, to taste
  • 1/2 cup cherry tomatoes
  • 1 small lemon, sliced
  • Fresh dill or parsley for garnish

Instructions

  • Preheat oven to 400°F (200°C).
  • In a small bowl, mix olive oil, lemon juice, garlic, oregano, dill, salt, and black pepper.
  • Place salmon fillets in a baking dish and brush with the seasoning mixture.
  • Add cherry tomatoes and lemon slices around the salmon.
  • Bake for 12-15 minutes until the salmon is cooked through.
  • Garnish with fresh dill or parsley and serve warm.
