- 2 cups cherry tomatoes
- 2 tbsp olive oil
- 2–3 sprigs fresh thyme (or 1 tsp dried thyme)
- 1 clove garlic, minced
- Salt and freshly ground black pepper, to taste
- Fresh basil or parsley, for garnish (optional)
- Crusty bread or pita, for serving (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a baking dish, combine cherry tomatoes, olive oil, garlic, thyme, salt, and pepper. Toss to coat evenly.
- Place the sliced halloumi on top or nestle it among the tomatoes.
- Bake for 20–25 minutes, or until the halloumi is golden and tomatoes are blistered and juicy.
- If desired, broil for an additional 1–2 minutes for a crispier top.
- Remove from oven, garnish with fresh basil or parsley, and serve immediately with crusty bread or pita.

- Halloumi doesn’t melt, making it perfect for baking or grilling.
