Instructions
- Preheat the oven to 400°F (200°C).
 - Place the cod fillets in a baking dish and arrange the cherry tomatoes around them.
 - In a small saucepan over low heat, melt the butter. Stir in the minced garlic, lemon zest, lemon juice, and chopped herbs.
 - Pour the lemon-herb butter evenly over the cod and cherry tomatoes.
 - Drizzle olive oil over the tomatoes and season everything with salt and pepper.
 - Bake for 15–18 minutes, or until the cod is opaque and flakes easily with a fork.
 - Serve immediately, spooning roasted tomatoes and butter sauce over each fillet.
