- 4 bone-in, skin-on chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon olive oil
- 1/2 teaspoon dried thyme
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken with salt, pepper, paprika, and thyme.
- In a baking dish, spread rice and top with onions and garlic.
- Pour in chicken broth and place chicken on top.
- Cover with foil and bake for 40 minutes.
- Remove foil and bake for another 15 minutes until golden brown.
