Description

Baked Broccoli and Cheese bites are crispy, cheesy, and packed with veggies. Oven-baked for a healthier twist, they make an irresistible snack or side dish that’s perfect for both kids and adults.


Ingredients

  • 2 cups broccoli florets, steamed and finely chopped
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/2 cup bread crumbs (panko or regular)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Olive oil or nonstick spray, for baking

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. Steam or microwave broccoli until tender, then finely chop.
  3. In a large bowl, mix chopped broccoli, cheddar cheese, Parmesan, eggs, garlic powder, onion powder, salt, and pepper.
  4. Add bread crumbs and stir until well combined and the mixture holds together.
  5. Scoop and shape the mixture into small logs or ovals with your hands.
  6. Place the shaped bites on the prepared tray.
  7. Lightly spray or brush tops with olive oil.
  8. Bake for 20–25 minutes, flipping halfway through, until golden and crispy.
  9. Let cool slightly before serving with dipping sauce of choice.
