- 2 cups broccoli florets, steamed and finely chopped
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1/2 cup bread crumbs (panko or regular)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Olive oil or nonstick spray, for baking
Instructions
- Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.
- Steam or microwave broccoli until tender, then finely chop.
- In a large bowl, mix chopped broccoli, cheddar cheese, Parmesan, eggs, garlic powder, onion powder, salt, and pepper.
- Add bread crumbs and stir until well combined and the mixture holds together.
- Scoop and shape the mixture into small logs or ovals with your hands.
- Place the shaped bites on the prepared tray.
- Lightly spray or brush tops with olive oil.
- Bake for 20–25 minutes, flipping halfway through, until golden and crispy.
- Let cool slightly before serving with dipping sauce of choice.
