Description

Bacon-Wrapped Chicken with Cheddar Garlic Cauliflower Mash is a savory, low-carb comfort food meal featuring juicy chicken wrapped in crispy bacon, paired with creamy, cheesy cauliflower mash that mimics mashed potatoes.

Ingredients

Units Scale
  • 4 boneless, skinless chicken breasts
  • 812 bacon strips (regular cut)
  • 1 tablespoon olive oil or butter
  • 2 cloves garlic, minced
  • 1 large head cauliflower, cut into florets
  • 1 cup shredded cheddar cheese
  • 1/4 cup heavy cream or milk
  • Salt and black pepper, to taste
  • Fresh parsley or chives (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper.
  2. Wrap each chicken breast with 2–3 bacon strips, tucking ends underneath or securing with toothpicks.
  3. Heat olive oil in an oven-safe skillet over medium heat. Sear bacon-wrapped chicken on all sides until browned.
  4. Transfer skillet to oven and bake for 20–25 minutes, until internal temperature reaches 165°F (75°C).
  5. While chicken bakes, steam cauliflower florets until tender (about 10 minutes). Drain well.
  6. In a food processor, blend cauliflower with garlic, cheddar cheese, heavy cream, salt, and pepper until smooth and creamy.
  7. To serve, spoon cauliflower mash onto plates and top with bacon-wrapped chicken. Garnish with chopped parsley or chives if desired.

Notes

  • Add fresh herbs like thyme or rosemary to the mash for extra flavor.
  • Brush chicken with hot sauce before wrapping in bacon for a spicy twist.
  • Try different cheeses like gouda or pepper jack in the mash.
  • Use ghee and dairy-free cheese for a low-dairy version.
  • Finish chicken under the broiler for crispier bacon if needed.
