Description

Bacon and Egg Fried Rice with Green Peas is a savory stir-fry that blends smoky bacon, scrambled eggs, and tender rice with sweet green peas for a fast, comforting meal perfect for breakfast or dinner.

Ingredients

Units Scale
  • 4 cups cooked rice (preferably cold, day-old)
  • 4 strips bacon, chopped
  • 3 eggs, lightly beaten
  • 1 cup green peas (fresh or frozen)
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste
  • Optional: chopped green onions for garnish

Instructions

  1. Heat a large skillet or wok over medium heat. Add chopped bacon and cook until crispy. Remove and set aside, leaving rendered fat in the pan.
  2. Add onion and garlic to the pan and sauté until softened, about 2–3 minutes.
  3. Push the aromatics to the side of the pan. Pour in the beaten eggs and scramble until just set, then mix with the onion and garlic.
  4. Add the cooked rice and green peas to the pan. Stir-fry for 4–5 minutes, breaking up clumps and mixing everything evenly.
  5. Drizzle with soy sauce and sesame oil. Stir to combine.
  6. Return the cooked bacon to the pan and mix well. Season with salt and pepper to taste.
  7. Garnish with chopped green onions if desired and serve hot.

Notes

  • Use cold, day-old rice for best texture.
  • Add diced carrots or bell peppers for extra flavor and color.
  • Substitute tamari or coconut aminos for gluten-free version.
  • Use turkey bacon or ham for a lighter alternative.
  • Reheat leftovers in a skillet with a splash of water or broth to restore moisture.
