Description

The Bacon and Egg Brioche Sandwich is a rich and satisfying breakfast sandwich featuring crispy bacon, fluffy eggs, and melty cheese tucked inside a buttery toasted brioche bun.

Ingredients

Scale
  • 4 brioche buns, halved
  • 8 slices bacon
  • 4 large eggs
  • 4 slices cheddar or American cheese
  • 1 tablespoon butter
  • Salt and black pepper to taste
  • Optional: avocado slices, hot sauce, or baby spinach

Instructions

  1. Cook bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate.
  2. In the same skillet, lightly toast brioche buns cut-side down until golden. Set aside.
  3. Crack eggs into a bowl and whisk with salt and pepper. Heat butter in a non-stick skillet over medium heat and scramble eggs until just set and fluffy.
  4. To assemble, place a slice of cheese on the bottom half of each toasted bun, followed by scrambled eggs, 2 slices of bacon, and any optional toppings.
  5. Top with the other half of the bun and serve warm.

Notes

  • For a fried egg version, cook eggs individually sunny-side up or over-easy.
  • Add sliced avocado or arugula for a fresh twist.
  • Great for meal prep—wrap in foil and reheat in a toaster oven.
