- 1 ripe avocado, mashed (about 1/2 cup)
- 2 apples, peeled and grated (about 1 1/2 cups)
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup brown sugar or coconut sugar
- 1/4 cup maple syrup or honey
- 2 large eggs
- 1/4 cup plant-based or regular milk
- 1 tsp vanilla extract
- 1/3 cup chopped nuts (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, mix mashed avocado, brown sugar, maple syrup, eggs, milk, and vanilla extract until smooth.
- Stir in grated apples.
- Gradually add the dry ingredients to the wet, mixing just until combined. Fold in nuts if using.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- Use sweet apples like Fuji or Gala for best flavor.
- Can be made dairy-free with plant-based milk.
- Store at room temperature for 2–3 days or refrigerate for up to a week.
- Freezes well—wrap tightly and store for up to 3 months.
