Description

Ingredients

  • 1 egg
  • 1/3 cup panko breadcrumbs
  • Salt and pepper to taste
  • 6 oz noodles (ramen, rice noodles, or soba)
  • 2 carrots, thinly sliced
  • 2 cups kale, spinach, or bok choy
  • 4 cups chicken or vegetable broth
  • 1 tbsp fish sauce (optional)
  • 2 tbsp fresh lime juice
  • Fresh cilantro or parsley, chopped (for garnish)

Instructions

  1. In a mixing bowl, combine ground meat, garlic, ginger, green onions, soy sauce, sesame oil, egg, breadcrumbs, salt, and pepper. Mix well and form into small meatballs.
  2. Heat a skillet over medium-high heat with a drizzle of oil. Brown meatballs on all sides, then set aside.
  3. In a large pot, bring broth to a boil. Stir in fish sauce (if using) and lime juice. Season to taste with additional salt if needed.
  4. Add sliced carrots to the broth and simmer for 5–7 minutes until tender. Add greens and cook for 2–3 more minutes.
  5. Meanwhile, cook noodles according to package directions. Drain and set aside.
  6. Return the meatballs to the pot and simmer in the broth for 8–10 minutes until fully cooked.
  7. To serve, divide noodles among bowls. Ladle in meatballs, vegetables, and hot broth. Garnish with fresh cilantro or parsley.
