- 1 egg
- 1/3 cup panko breadcrumbs
- Salt and pepper to taste
- 6 oz noodles (ramen, rice noodles, or soba)
- 2 carrots, thinly sliced
- 2 cups kale, spinach, or bok choy
- 4 cups chicken or vegetable broth
- 1 tbsp fish sauce (optional)
- 2 tbsp fresh lime juice
- Fresh cilantro or parsley, chopped (for garnish)
Instructions
- In a mixing bowl, combine ground meat, garlic, ginger, green onions, soy sauce, sesame oil, egg, breadcrumbs, salt, and pepper. Mix well and form into small meatballs.
- Heat a skillet over medium-high heat with a drizzle of oil. Brown meatballs on all sides, then set aside.
- In a large pot, bring broth to a boil. Stir in fish sauce (if using) and lime juice. Season to taste with additional salt if needed.
- Add sliced carrots to the broth and simmer for 5–7 minutes until tender. Add greens and cook for 2–3 more minutes.
- Meanwhile, cook noodles according to package directions. Drain and set aside.
- Return the meatballs to the pot and simmer in the broth for 8–10 minutes until fully cooked.
- To serve, divide noodles among bowls. Ladle in meatballs, vegetables, and hot broth. Garnish with fresh cilantro or parsley.
