Ingredients

Units Scale

Fritter Bites:

  • Nonstick cooking spray
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 2 tsp ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cups finely diced Honeycrisp or Gala apples (about 2 medium)

Apple Cider Glaze:

  • 2 cups powdered sugar
  • 1/3 cup + 2 tbsp apple cider or apple juice

Instructions

To Make the Fritter Bites:

  1. Preheat Oven: Preheat to 400°F and grease a baking sheet with nonstick cooking spray.
  2. Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. Prepare Wet Ingredients: In a large bowl, whisk melted butter and sugar until smooth. Add the egg, vanilla extract, and applesauce, whisking until fully combined.
  4. Combine Batter: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the diced apples gently.
  5. Shape Bites: Scoop 1-tablespoon portions of batter and place them on the prepared baking sheet, leaving space between each.
  6. Bake: Bake for 10 minutes.

To Broil and Glaze:

  1. Prepare the Glaze: In a small bowl, whisk powdered sugar and apple cider/juice until smooth and pourable.
  2. First Glaze Application: Brush a layer of glaze over the warm fritter bites, allowing it to drip down the sides.
  3. Broil: Turn the oven broiler to high and broil the fritter bites for 2-4 minutes, rotating the pan frequently, until the glaze begins to caramelize and bubble.
  4. Second Glaze Application: Remove from the oven and brush the remaining glaze evenly over the fritter bites.
  5. Set: Let the bites sit for 15 minutes to allow the glaze to set before serving.

Notes

  • Apple Variations: Honeycrisp and Gala apples work best for their sweetness and texture.
  • Glaze Thickness: Adjust the glaze consistency by adding more powdered sugar for a thicker glaze or more apple cider for a thinner consistency.
  • Storage: Store in an airtight container at room temperature for up to 2 days.
