- 2 tbsp cream cheese, softened
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 3/4 cup almond flour or finely crushed graham crackers
- 8 oz dark or semi-sweet chocolate, chopped
- 1 tsp coconut oil (optional, for smoother coating)
- Optional toppings: chopped almonds, flaky sea salt, or caramel drizzle
Instructions
- In a mixing bowl, combine almond butter, caramel sauce, cream cheese, vanilla, and salt until smooth.
- Stir in almond flour or crushed graham crackers until a thick dough forms.
- Refrigerate the mixture for 30 minutes to firm up.
- Roll into 1-inch balls and place on a parchment-lined tray. Freeze for 20 minutes.
- Melt chocolate and coconut oil in a microwave-safe bowl or double boiler until smooth.
- Dip each chilled ball into the melted chocolate, coating fully, and place back on the tray.
- Top with chopped almonds, flaky salt, or drizzle with caramel while chocolate is still wet.
- Chill until set. Store truffles in the refrigerator until ready to serve.
Notes
- Use almond flour to keep them gluten-free.
- Can be made ahead and stored for up to 5 days in the fridge or frozen for longer storage.
- Soften caramel if too stiff by warming briefly before mixing.
