- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 medium potatoes, peeled and cubed
- 1 can (14 oz) crushed tomatoes
- 1/2 cup chicken broth or water
- 1 tsp paprika
- 1/2 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet or pot over medium heat. Add onion and sauté for 3–4 minutes until soft.
- Add garlic and cook for 1 minute until fragrant.
- Place chicken breasts in the skillet and sear for 2–3 minutes per side until lightly golden.
- Add potatoes, crushed tomatoes, chicken broth, paprika, oregano, salt, and pepper. Stir to combine.
- Bring to a simmer, cover, and cook on low heat for 25–30 minutes, or until chicken is cooked through and potatoes are tender.
- Remove lid and simmer uncovered for 5 more minutes to thicken the sauce if desired.
- Garnish with chopped fresh parsley before serving.
Notes
- For extra flavor, marinate chicken in garlic, lemon, and herbs beforehand.
- You can use sweet potatoes for a slightly sweet twist.
- Serve with rice, couscous, or crusty bread to soak up the sauce.
