Description

A cozy and flavorful dish of tender chicken breast simmered with soft potatoes in a rich tomato sauce. Perfect for a wholesome family dinner.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and cubed
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup chicken broth or water
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet or pot over medium heat. Add onion and sauté for 3–4 minutes until soft.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Place chicken breasts in the skillet and sear for 2–3 minutes per side until lightly golden.
  4. Add potatoes, crushed tomatoes, chicken broth, paprika, oregano, salt, and pepper. Stir to combine.
  5. Bring to a simmer, cover, and cook on low heat for 25–30 minutes, or until chicken is cooked through and potatoes are tender.
  6. Remove lid and simmer uncovered for 5 more minutes to thicken the sauce if desired.
  7. Garnish with chopped fresh parsley before serving.

Notes

  • For extra flavor, marinate chicken in garlic, lemon, and herbs beforehand.
  • You can use sweet potatoes for a slightly sweet twist.
  • Serve with rice, couscous, or crusty bread to soak up the sauce.
