Description

A rich and comforting potato soup loaded with cheese, herbs, and tender potatoes, perfect for a cozy meal.


Ingredients

  • 4 large potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1 cup shredded cheddar cheese (plus extra for garnish)
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  • Cook Potatoes: In a large pot, boil potatoes in broth until tender.
  • Make Roux: In another pan, melt butter, add onions and garlic, cook until soft. Stir in flour to form a paste.
  • Combine: Slowly add cream, sour cream, thyme, salt, and pepper, stirring constantly.
  • Blend: Mash half the potatoes for a creamier texture, then mix everything together.
  • Add Cheese: Stir in shredded cheese until melted.
  • Garnish & Serve: Top with extra cheese and parsley. Serve warm.

Notes

  • For a smoky flavor, add cooked bacon bits.
  • Can be blended fully for a smoother soup.
